Some will be featured on the menu at Saturdays sold out Forage and Feast event at Pythouse Kitchen Garden (Michelin Green Star). I'm running the mornings foraging session and @chefdarrenbroom and his team will then serve us a feast featuring some of these wild ingredients alongside their amazing seasonal and local produce dishes.

Back at the start of March I was recceing a spot for my first private booking of the year......

.....Was disappointed to find forestry workers (with cool remote controlled machines) removing the growth from around new native species trees planted about five years ago (after harvesting of a conifer plantation).

They were removing undergrowth rich with many species including wild raspberries, wild angelica and rosebay willow herb (aka fireweed). Presumably they thought it would help the recently planted trees.

Of course Fireweed (also known as Bombweed) got these names as it is an early coloniser of damaged/disturbed ground.

So whilst it was disappointing not to be able to show the early shoots to the mid-March foraging group, the site is now covered in 100's of tasty shoots!

Hazel Catlin's - edible but only just!

Very bitter on the palate. I did "crystallise" some once which made them slightly better.

I see they can be dried and ground for use as flour. I'd be interested to hear from anyone who has done that.

I preserved a kg of these anchovies around 18 months ago. Dry salting followed by raw pickling and then packed under a good oil.

Then @maxvolpi74 told me about anisakis! So I froze them in small containers still covered with the oil.

We've been eating them every now and again over the 18m and they keep improving. This is the last few and they are really good.

An innocuous looking deadly fungi containing the same deadly amatoxins found in the death cap. Cause the same symptoms, if ingested, leading to likely death.

I've been foraging these woods for the last 10 years and never seen Funeral Bells there before. Fungi continue to suprise.

Number 3 was the surprise sign!

1. Field Blewits - good late Autumn or early Winter edible.

2. Wild Garlic - good Spring edible but these mild temperatures have promoted some early growth.

3. St George's Mushrooms - normally a Spring mushroom but occasionally, if the conditions are right, it can flush in Autumn. I've only seen this happen once before. Found 5 yesterday.

Weighed about 3.5 kg and everyone got to take some home 👍

Hen of the Woods is a grade A gourmet edible fungi that is usually found at the base of oak or sweet chestnut trees.

The fruiting is triggered by a maintained drop in night time temperatures, which usually means October.

But only rarely do I spot the actual Green Elf Cup fruiting bodies.

A saprobic fungi - it's breaking down the remaining wood into it's component parts.

In the meantime, I'll keep harvesting the young buttons to make fantastic pickled mushrooms👍
